No more rubbery meatballs!

Being 100% Italian I know what a good meatball tastes like (my Momma makes the best!!) Have you ever had a “rubbery” meatball !? I know I have and they are the worst! Well here is the the secret to a good meatball:

MeatballsYou are not looking for a protein packed “ball”, when meatballs originated in Italy, it was the poorer families who were trying to stretch a small amount of meat, therefore adding lots of fresh bread crumbs, minced veggies, and if lucky enough to have, some pork butt! So you def DON’T want all meat! A blend of ground beef, veal, and pork combined with a good amount fresh bread crumbs, minced onions, garlic, and even some puréed carrots/celery is the key to a good ball!
