Recipe of the Month: Winner, winner chili dinner: three unique chili recipes!

Here in South Jersey the fall weather is finally starting to kick into gear; chunky sweaters and boots will soon be the attire of norm, and of course, football is in full effect! No better time to start whipping out some of my comforting dishes, like soups, stews and chili!!

To be honest, growing up I was not a huge chili lover, but then venturing into my personal cheffing adult life, I started to receive a lot of requests for chili – to my dismay, many people LOVE chili. Of course I could not just stick to the basics, I had to make the experience exciting, so I could “get-into” preparing the dish. Hopefully that makes sense to you all.

So with my natural personality of not ever following any recipe LOL, I botched a few recipes I had, added a little bit of “this” and a smidge of “that” and I created a few unique chili dishes incorporating some of my favorite seasonal ingredients, like apples, pumpkin and beets! So now, even I will eat a bowl (ok let’s not get carried away, more like a cup haha) of chili. 🙂

Creamy Apple Chicken Chili

Apple Chicken ChiliShredded chicken, cubed apples and corn kernels are cooked in a creamy cumin and chili powder infused sauce; pinto and white beans are added for extra protein and fiber. Upon serving, the chili is topped with a dollop of sour cream and a sprinkling of green onions, and perfect served with one of Chef Angela’s unique corn breads!

Crockpot Beet Chili

Beet ChiliClient’s choice of lean ground sirloin, chicken or turkey is slow-cooked with kidney beans, diced tomatoes, garlic, onion, celery, turnips, carrots, tomato sauce, cumin, paprika, coriander…and the special ingredient responsible for the ruby red color in this dish: BEETS! Garnished with fresh scallions, it’s a great way to get your daily dose of veggies in, and perfect served over a bed of black rice. (Vegetarian option eliminates the meat and adds turnips, carrots and an additional can of beans.)

Pumpkin Chili

Pumpkin ChiliLean ground sirloin (or turkey), pumpkin puree, diced onions, garlic and tomatoes are combined with Chef Angela’s homemade chili spice blend and slow cooked to a smoky finish; served topped with a light citrus and coriander cream sauce.
