Recipe of the Week: MiMi’s Molasses Cookies

These molasses cookies come highly requested from my Dad, he grew up eating these cookies. His mom, my MiMi, loved to bake; I remember when she used to baby-sit me, we would make these cookies to give to my Daddy when he would pick me up after work. I never wanted to leave my MiMi’s house, I loved baking with her and spending time with her and my cousin Kyle who she baby-sat as well! To me these cookies are very “cake-like” not chewy, and not crunchy, a little dense, but by no means heavy! I recommend using coffee instead of water, just make a little extra Joe in the morning and put it aside for later use when it is time to start baking – the coffee really helps enhance the molasses taste.

I always add my own touch by adding raisins (my Dad’s fav) and a sprinkling of nutmeg. The cookies are best when taken out of the oven at around the 8 minute mark – BUT allow the cookies to rest and harden up before removing them from the cookie sheet – otherwise the cookies will crumble moving them from the cookie sheet to cooling rack. Enjoy!

MiMi’s Molasses CookiesMolasses Cookies

Yield – about two dozen cookies

Ingredients:

2 cups flour

1/2 cup sugar

1/2 cup butter

1/2 cup dark molasses

1 egg

1/3 cup coffee or water

2 tsp. baking soda

1 tsp. ground ginger

1 tsp. cinnamon

1/2 tsp. salt

1/2 cup raisins (optional)

Directions:

  1. Cream together butter, sugar, molasses, egg and coffee/water
  2. Mix together flour, baking soda, ginger, cinnamon and salt
  3. Mix dry ingredients with butter mixture
  4. Scoop about 2 tablespoons of dough per cookie onto a greased cookie sheet
  5. Bake at 400 degrees about 8 minutes, let cool on sheet to firm up before removing to cooling rack
