Recipe of the Week: Pickle/Cucumber Wraps

So here we are, the LAST Recipe of the Week of 2016 – jeezoo, this year flew by! I hope you all enjoyed the recipes I have shared with you every week, and I hope that some of them make it into your recipe collection!

I am going to leave you with this super easy-peasy three ingredients, no-bake appetizer/snack! I made these for Christmas Eve, since there is still no oven at home!! They are also great to make ahead of time, and perfect to pack for a light lunch or snack during the week. Oh, and they are naturally low-carb and gluten free!

Pickle/Cucumber WrapsPickle Cucumber Wraps

Yields: 16 bite-sized wraps 

Ingredients:

8 slices corned beef lunch meat (or roast beef or lunch meat of choice!)

4 ounces cream cheese or goat cheese

4 medium dill pickles or 1 cucumber peeled and cut in half horizontally, and then in half vertically, to make 4 “pickle-sized” pieces

Directions:

  1. Lay corned beef/lunch meat of choice in stacks of two, spread 1 ounce of cream cheese/goat cheese onto each stack.
  2. Place a pickle/cucumber directly in the center of each. Roll corned beef around the pickles/cucumbers and cut each roll into four equal parts – that’s it!

Can’t get much easier than that! Enjoy!
