For any of you who follow me on Instagram, Facebook or Twitter, you’ve probably seen this picture I recently posted. The lid of Libby’s Pure Pumpkin had helpful tips on using canned pumpkin puree when baking, which by the way, doing so makes the recipes low fat and vegan! That’s a win-win for a chef like me who is always modifying recipes to fit my clients’ dietary restrictions. So, thank you again, Libby’s! This got me to thinking about other ways pumpkin can be used this pumpkin-crazed world we live in nowadays. Gone are the days that we strictly pick up a can of pumpkin for Thanksgiving dessert, which wouldn’t be anything else other than pumpkin pie!
