Over the weekend I had the pleasure of getting jazzy in creating nutrient-dense smoothies for a client of mine who is dealing with dysphagia (difficultly swallowing) due to recent jaw surgery. My client can ONLY have puréed foods and smoothies for 6 months!! Wellllll, Chef Annie and her delicious smoothies came to the rescue!!
I made her over 50 puréed meals in addition to a few dozen smoothies! They may have not looked the most pleasing, but they tasted great and I have already received feedback from my client saying she loved everything!!
Shown here are my avocado, kale and white bean smoothie,
my chocolate black bean smoothie – really! SO yummy –
and my tuna smoothie – that’s not a typo – fresh flaked TUNA blended with yogurt, almond milk, kale, banana and a drizzle of raw honey. Sounds scary, I know, but trust me, I don’t lie, you cannot taste the tuna and it is packed full of protein.
