Broccoli Mac and Cheese Perfect for when you are craving comfort food but do not want to waste a day’s worth of calories on one meal. High fiber elbow macaroni is incorporated into a light cheese sauce of fat-free milk and reduced-fat cheddar cheese and broccoli pieces, finished off with a sprinkling of parmesan cheese and baked to a golden bubbly finish, about 315 calories for a 1 cup serving!

eggcadosEgg-cados A delicious heart-healthy dish, Chef Angela fills avocado halves with fresh eggs and client’s choice of toppings, perfect for a low-carb, healthy fat breakfast.

Prosciutto and Pepper Stuffed Chicken Breast Thin sliced chicken breasts are rolled around reduced-fat provolone cheese, roasted red peppers, baby spinach and prosciutto, lightly coated in bread crumbs and baked to a crisp finish. One bite of melted cheese and crisp coating and you will be hooked at 190 calories per chicken roll-up!

Zucchini Lasagna By replacing the lasagna noodles with thin-sliced zucchini, Chef Angela creates a delicious, naturally lower carb (and gluten-free) lasagna that’s loaded with vegetables, Bolognese sauce, and reduced fat cheese blend.

Celery Root and Parsnip Puree A great alternative to heavy mashed potatoes! Pureed celery root and tangy parsnips are incorporated with light sour cream and seasoned simply with salt and pepper.

Buffalo Turkey Burgers with Blue Broccoli Slaw Lean ground turkey, hot sauce, grated carrots (for a hidden extra fiber boost), garlic and sweet red onion are formed into juicy patties and either grilled or pan seared to finish. Topped with Chef Angela’s skinny blue cheese broccoli slaw, all for 208 calories a burger!

Garlic Mock Mashed Potato Naturally low-carb mashed cauliflower takes the place of potatoes and is seasoned with chives, garlic, parmesan cheese and a bit of low fat cream cheese for an extra-creamy finish!

strawberry banana breadBanana Bread with Roasted Strawberries This light and healthy whole wheat banana bread is filled with flavor packed roasted strawberries; makes for a perfect breakfast or snack, one slice is only 88 calories!

Asparagus Guacamole Pureed steamed asparagus, cilantro, jalapeno, light sour cream, fresh squeezed lime juice and scallions take the place of the high calorie avocado in this delicious, creamy dip – perfect along side some fresh crudités as a snack, as a sauce on poultry or as a dressing on a salad.

Sweet and Fiery Pork Tenderloin with Mango Salsa Trim pork loin is marinated in a Sriracha, fresh ginger, honey and red chili sauce, baked to a finish and served with a simple and clean mango, cilantro, jalapeno and lime salsa. Light, tasty and only 247 calories per serving.
