This week I am going to share a “staple” recipe that I prepare probably about 3 times a week for various clients – my Coconut Basmati Rice. This is a GREAT recipe because the base is only 3 ingredients, it is super quick (and hands free), and you can build on this recipe by adding various spices/ingredients…..such as cilantro/lime, toasted coconut flakes, mango, pineapple, or my favorite, 1 1/2 tsp ground ginger! Enjoy!
Coconut Basmati Rice
1 can full or reduced fat coconut milk
1 tsp brown sugar
1 cup basmati rice
In a pot over medium/high heat, bring the coconut milk and sugar to a boil, add rice and stir.
Pour the mixture into an oiled 9×13 baking pan, cover with tin foil and bake at 375 degrees for 30 minutes.
Ta-da! PERFECTO rice! Now stir in your choice of enhancements, and enjoy!
