In this week’s recipe of the week, I am featuring my dear Aunt Jeanne’s chicken salad! Just last Sunday when I was attending a family event, I had the opportunity to try it out (delicious!) and chat with my aunt. It was during that time I realized that my Aunt Jeanne is one of my biggest fans and that she looks forward to reading my ROTW each week.
I thought what better way to honor an aunt who, in many ways, has filled the void for my own grandmother (Gloria, her older sister) by NEVER forgetting a birthday or monumental time in my life, and the lives of my siblings! Thank you Aunt Jeanne for sharing such a scrumptious recipe and for being so supportive of my business and me!
Aunt Jeanne’s Chicken Salad
Ingredients:
1/2 cup Mayonnaise
1/3 cup red pepper jelly
1/4 cup minced green onions
2 Tbs. chopped fresh cilantro
1 tsp. lime zest
2 cups finely chopped cooked chicken
1/2 cup finely chopped celery
1/2 cup finely chopped toasted pecans
Salt and freshly ground pepper
Directions:
- Whisk together mayonnaise, jelly, green onions, cilantro and lime zest.
- Stir in chicken, celery and pecans until blended.
- Season with salt and pepper to taste.
- Cover and chill 4 hours.
Great served in mini pita pockets with watercress!
