Giving me a pound of ground turkey is like giving an artist a blank canvas! There are SO many fun ingredients you can add to ground turkey, making the super healthy and inexpensive meat fancy enough for your next dinner party! Turkey burgers always get a bad rap for being lame, and I agree….when you form bland ground turkey into a patty, overcook it to death and then try to convince yourself you are eating a big, juicy burger, all while you are waiting for your “plastic” fat-free cheddar cheese to melt LOL.
Try this recipe out, and I can assure you – you will NOT have to pretend you are enjoying your healthy burger! I know the combo sounds odd, but can you really go wrong with cheese, avocado and blueberries? I think not.
The tangy sweetness of the mayo added to the heartiness of the meat and the saltiness of the Parmesan cheese, make for a truly heavenly flavor combo, and the sauce is a great on a turkey sandwich or to use up leftovers from Thanksgiving dinner (if you can remember to pull this recipe out six months from now ha ha).
Parmesan Avocado Turkey Burgers with Blueberry Mayo
Yields : 4 burgers
Ingredients
1 lb. ground turkey
1 ripe avocado
1/2 cup grated parmesan cheese
1/2 tsp. salt
1/4 tsp. pepper
1/8 tsp. cayenne
1/2 tsp. garlic powder
1/2 tsp. onion powder
1/2 tsp. cumin
1/4 cup plain bread crumbs (optional, add only if you feel like your mixture needs a little binder)
Directions
- Roughly mash avocado, mix together with turkey and all other ingredients. Form into 4 patties
- Bake @ 375 for about 12-15 minutes or until thermometer reads 160.
- Top with blueberry mayo and your toppings of choice….arugula is always a nice touch!
Blueberry Mayo:
1 cup mayo of choice (light mayo, dairy-free, paleo -whatever your go-to is!)
1/2 cup blueberries
1 tsp. sugar
1 tsp. lemon zest
- Combine all ingredients in food processor, give it a whirl until blended, keeps up to 7 days in the fridge!
