Three Ingredient Banana Bread

Every Sunday when I go to my local super market, they have packs of 6-7 very ripe bananas for $.59…and well, I love me some bananas and a bargain! LOL  I always buy two packs, because the bananas are great to freeze for nay-nay ice cream and smoothies, and are great to bake with, which leads me to this post! I had some bananas that I didn’t freeze on Sunday, so by Wednesday they were reeeeally ripe, too ripe to freeze and use later; they had to be used right then and there.

I used ingredients that I had on hand and that would only take me minutes to whip up. Lo and behold, a beautiful loaf of sweet bread emerged! This bread is high in fiber and protein, as well gluten-, grain-, dairy-, nut-, soy-, refined sugar-, oil and egg-free! Needless to say, it is an allergen-free (but not taste-free!) sweet loaf!

Three Ingredient Banana Bread Banana Bread Ingredients

Yield: 8 slices Per slice: 1 gram fat, 30 grams carbs, 4 grams protein, 4.5 grams fiber, and 150 calories

INGREDIENTS

1 cup quinoa flour (I used Bob’s Red Mill brand)

4 ripe bananas

1 cup pureed/mashed chickpeas

1 tsp baking powder

1/2 tsp baking soda

Optional Toppings: sliced ripe banana, mini chocolate chops, raisins, chopped nuts, coconut flakes

DIRECTIONS

      1. Preheat oven to 375 degrees. Mash bananas with chickpeas.

 

  1. Banana Bread MixingMix all ingredients together in a bowl (do I really need to say that? I know you are all a bunch of smarty-pants, and are not going to mix all the ingredients on your kitchen counter! LOL)

        1. Line a standard loaf pan with parchment paper, and for extra caution, spray with cooking spray. Pour your banana batter into the pan, add toppings if so desired. I sliced another banana and used that as the topping.

 

    1. Banana BreadBake for 30-40 minutes, until knife inserted into center of the loaf comes out clean. Allow to completely cool before slicing and eating.

 

Wondering how tasty this bread is? Before I had a chance to take pictures of the cut loaf, my Mom and brother had eaten the whole thing! I had to make another loaf and hide it just so I could photograph it for you! 🙂
