I seem to be making a lot of chicken dishes lately, so thought I’d share them with you. Each preparation has a non-traditional twist (or two) – no boring chicken here!
Broccoli/Chicken Stir Fry
A healthy version of a standard unhealthy take-out food favorite! No MSG, mass amounts of sugar or corn starch, just simple and “clean” ingredients. Gluten-free, dairy-free and Paleo.
Spicy Peanut Chicken Tacos
Chicken thighs slow-cooked in a cumin, salsa, lime juice, coconut milk and PB2 (reduced fat, all natural peanut butter alternative) sauce; shredded and combined with cilantro, scallions and toasted peanuts for a nice crunch! Served in flour or corn tortillas with a drizzle of sour cream and topped with a cilantro/water chestnut salsa!! I made these tacos recently and they were amazing. I can’t take full credit for this recipe, the base recipe was given to me by a friend and of course, I added my own jazz to the dish! That’s what I love about food/cooking/recipe sharing, it is a great way to connect and learn something new while stuffing your face and socializing haha….Hope my version is as tasty as his was!
Asian-Style Crusted Chicken
Chicken tenders are dipped in a soy sauce/egg mixture and coated in a scrumptious, fine-ground peanut and caramel popcorn coating and served with a sweet and sour dipping sauce. Caramel corn is not just for the circus anymore!. 3 tenders = 325 calories
Rosemary/Lemon Turkey Patties with Brie Cheese
Lean ground turkey is combined with lemon zest, fresh rosemary, garlic, shredded brie cheese, minced onion, and a heaping spoonful of seedless raspberry jam; the mixture is formed into patties, baked and served topped with a light spread of walnut-raspberry jam. Yum!
Herbed Couscous and Chicken Stuffed Pepper
Pearled couscous, shredded chicken breast, lemon, mint, herbed goat cheese, parsley, EVOO, garlic and S & P are combined to serve as the filling for these non-traditional stuffed peppers. A taste of the Mediterranean!
Ranch/Parmesan Crusted Chicken Breasts
Chicken breast topped with crushed Ritz crackers, parmesan cheese and ranch dressing, baked to a golden moist finish! Fancy enough for adults, yet super kid-friendly too
Cherry/Teriyaki Chicken Salad
Amazing (if I do say so myself) and best part: totally mayo-free!! Shredded chicken, cherries, carrots, scallions, toasted almonds (for a nice crunch!), celery, and my homemade teriyaki dressing! Dairy-free and Gluten-free
Pretzel-Crusted Chicken Tenders
A perfect way to snack and dine at the same time! I coat chicken tenders in my homemade, honey/Dijon dressing and crushed pretzels, then I bake them (not fry, for a healthier alternative!) to a golden finish and serve with a Cheddar/Dijon dipping sauce. These may be Kid-friendly, but grown-ups will love them too!
