Recipe of the Month: Low-Carb Gluten-Free Cauliflower Waffles – a Sweet or Savory Breakfast Choice

I know, I know, I KNOW what you are all thinking, cauliflower WAFFLES?! Hear me out though, I mean I am sure most of you eat carrot cake without complaint. These low-carb, gluten-free, grain-free cauliflower waffles fall in the same category. For years I have been making my clients low-carb cauliflower muffins, so with a little experimentation and tweaks, I was able to morph the recipe into a delicious breakfast treat.

The key with these healthy waffles is that you need to get creative with the toppings. Since you are already skimming on the carbs, you can always stick with good ol’ maple syrup, or one of my go-to fav’s, Walden Farm Sugar-Free maple syrup (link below); or you can keep it super healthy and clean, and slice some bananas on top and drizzle with pure maple syrup or honey! And if you opt for the savory version, then you should def top with a poached egg and crumbled bacon! Also, an added bonus to these bad boys: hidden veggies at breakfast! What better way to hit your veggie quota than starting the day off with a delicious, nutrient-dense delight!

 

Cauliflower WafflesCauliflower Waffles

Yield: 2 6-inch round waffles*

Ingredients

3 cups “riced” cauliflower (about a medium-sized head of cauliflower)

3 Tbsp. almond flour

1 Tbsp. coconut flour

3 eggs

1/4 cup COMBO of coconut flour and almond flour OR 1/4 cup Parmesan cheese (for savory version)

2 tsp. ground cinnamon OR 1 tsp. garlic powder (for savory version)

6 tsp. Swerve sweetener  (link below) OR stevia – omit for savory version

Directions

Riced Cauliflower
    1. Wash cauliflower and chop into florets. Add to food processor and pulse until your cauliflower reaches “rice” consistency, scraping down the sides as necessary.
    1. Cauliflower Waffles IngredientsCombine riced cauliflower, eggs, almond flour, coconut flour, almond flour/coconut flour combo or Parmesan cheese, cinnamon or garlic powder in large bowl and stir until well-combined.
    1. Spray your waffle iron with cooking spray and heat on medium until ready to cook.
Cauliflower Waffles
  1. Scoop out 1 cup of cauliflower mixture, packed, and add to waffle iron. Press out to cover entire surface of the waffle iron, then close waffle iron and cook for six minutes.
  2. Open to reveal your low-carb cauliflower waffle!
  3. Repeat the process with the rest of your cauliflower mixture, spraying your waffle iron each time.

Store in the refrigerator for up to 1 week, or they freeze great!

*Each waffle is: 350 calories, 35 g carbs, 13 g fiber, (22 NET carbs) 20 g protein, 21 g fat
