Recipe of the Week: Peach/Coconut Salsa

As we are approaching July (can you believe that half of the year has already passed?!) and 4th of July weekend (didn’t we JUST kick off summer with Memorial Day?!), now is the time to stay out of the heat of the kitchen. Now I did not say stay away from cooking! What I mean is, that during the hot months of course I keep on cooking (mama has to pay her bills lol) BUT I try to minimize running the oven allll day.

I try to keep my clients’ menus light, cooking with seasonal summer fruits and veggies! One of my fav ways to jazz up an any dish is to add a refreshing relish or salsa.  Of course they can stand alone as a dip with various “dippers” (chips, veggie sticks, pitas etc.), but try adding a chunky salsa to grilled chicken breast, or skewered shrimp kabobs, or on juicy burgers.

Give this unique Peach/Coconut Salsa a try at your holiday BBQ; make sure to add your OWN twist and then TELL ME about it!!

Peach/Coconut SalsaPeach Coconut Salsa

Recipe yields about 2 cups

INGREDIENTS

2 ripe peaches, peeled and chopped

1/4 cup finely diced red onion

1/4 cup toasted coconut flakes

3 TBSP finely chopped cilantro

1/2 lime, juiced

salt + pepper to taste

1/2 tsp. cumin

1 TBSP Extra Virgin Olive Oil (feel free to omit to keep this oil/fat free)

1/2 to 3/4 cup diced cucumber

1 tsp. finely minced jalapeno

Optional: 1/2 cup diced tomatoes

 

DIRECTIONS

Stir ingredients together and serve!
