Happy Monday! I hope you all had a lovely holiday weekend! I don’t know about you, but I am ready to get cooking at work again this week (literally lol). I am starting the week with a double whammy, a tip of the day PLUS the recipe of the week –  enjoy my loves!

Tip of the Day

Pomegranates: no fruit more lovely …and annoying!  Peeling and seeding is tedious, but the payoff is scrumptious! One fruit can yields hundreds of seeds (it’s a symbol of fertility/abundance in many cultures). Pomegranates are high in fiber/potassium and are in season from September to January, and are great in salsas, salads, sangria or in dips (like the recipe below!). So grab them while you can!
